How to make PERI-PERI JOLLOF RICE & PERI-PERI CHICKEN
**Peri-Peri Jollof Rice**
*Ingredients:*
– 2 cups of long-grain parboiled rice
– 1 cup of blended tomatoes, red bell peppers, and onions
– 1/4 cup of tomato paste
– 2 tablespoons of Peri-Peri sauce
– 1/2 cup of chicken or vegetable broth
– 1 chopped onion
– 2 cloves of garlic, minced
– 1 teaspoon of thyme
– 1 teaspoon of ginger
– Salt and pepper to taste
– 2 tablespoons of vegetable oil
– Peas, carrots, or any vegetable of choice
*Instructions:*
1. Rinse the rice under cold water until the water runs clear. Set aside.
2. Heat oil in a large pot over medium heat. Add the chopped onions and garlic, sauté until translucent.
3. Stir in the blended tomato mixture and tomato paste. Cook for 10 minutes until the sauce is reduced and the oil begins to separate.
4. Add the Peri-Peri sauce, thyme, and ginger. Cook for 2 more minutes.
5. Stir in the rice, ensuring it is well coated with the sauce.
6. Pour in the broth, add salt and pepper. Mix well and bring to a boil.
7. Reduce the heat to low, cover, and let it simmer for 20-25 minutes or until the rice is cooked.
8. Add vegetables a few minutes before the rice finishes cooking.
9. Fluff the rice and serve warm.
**Peri-Peri Chicken**
*Ingredients:*
– 4 chicken thighs or drumsticks
– 1/4 cup of Peri-Peri sauce
– 2 tablespoons of olive oil
– 1 tablespoon of lemon juice
– 3 cloves of garlic, minced
– 1 teaspoon of paprika
– 1 teaspoon of salt
– 1/2 teaspoon of black pepper
*Instructions:*
1. In a bowl, mix Peri-Peri sauce, olive oil, lemon juice, garlic, paprika, salt, and pepper.
2. Coat the chicken pieces thoroughly with the marinade mixture. Allow it to marinate in the refrigerator for at least 1 hour or overnight for best results.
3. Preheat the oven to 200°C (400°F).
4. Place the chicken on a baking sheet lined with parchment paper.
5. Roast the chicken for 35-40 minutes, or until it is cooked through and golden brown, basting occasionally with the leftover marinade.
6. Remove from the oven and let it rest for a few minutes before serving.
Serve the Peri-Peri Chicken alongside the Peri-Peri Jollof Rice for a flavorful meal. Enjoy!
